Palmyra Blossom Sugar
Tapped from the flower of Borassus flabellifer, Cambodia's national tree. Caramel-dark, high in polyphenols, glycemic index 48. Granulated, paste, syrup and stick sachets.
Mango, jackfruit, pineapple & dragon fruit
Keo Romeat mango, jackfruit, pineapple and dragon fruit, dried at low temperature in Srolan, Kandal. 200 g of dried mango is seven whole Cambodian mangoes. Shelf life is shorter than sulphited fruit — that is the trade-off for no additives.
M23 Cashew Nuts
Large-grade kernels grown eco-friendly among Cambodia's primeval forest, high in oleic acid. Graded WW180 to WW450, splits and pieces. Roasted over 90 minutes in a low-temperature coffee roaster — crisp outside, still white inside — or steamed. 200 g and 500 g.
Whole Peppercorns
Black, red and white peppercorns from our own Pepper Joy Farm in Ratanakiri. Sun-dried whole and sorted by density — strongly aromatic, and it holds up in long cooking.

Sap is collected by farmer partners and reaches our own production centre the same day. Nothing is bought on the open market.

Farmer partners climb and tap the palm flower twice daily through the dry season.

In the dry season there is no rice work. The palms are what pays for school.
Around 20,000 Cambodian families make palm sugar, most of it as paste on inefficient stoves that scorch the batch and cut its value. We buy at fair-trade terms, supply fuel-efficient cookstoves, and take the whole harvest at export grade.
A palmyra palm yields for more than sixty years and needs no replanting, no irrigation and no clearing. It is one of the most sustainable sweeteners in the world, and it grows wild in the rice fields.
